To mark October's Black History Month, Year 10 students made an array of dishes inspired by different countries such as Jamaica, the Caribbean, Africa and India. Dishes researched and prepared included jerk chicken, South African apple cake, Caribbean-inspired Cajun chicken, rice and peas, samosas, and jollof rice. These dishes gave students lots of scope to develop their practical skills in terms of handling raw meat, marinating, and using a variety of seasonings and spices. Students created and presented some delicious dishes while also working with new ingredients that many had not used before.
In Food and Nutrition, we always try to link the dishes we make to the seasons. This week, to mark Bonfire Night, Year 9 students made a Bonfire-inspired gingerbread cake while also learning about the food science behind raising agents in baking. Some great outcomes were achieved with toppings piled high to replicate an actual bonfire! Students used traditional autumnal flavours such as caramel, toffee, and honeycomb withing their bakes.
